The coffee shop industry is defined by the proliferation of specialty coffee shops serving coffee-based drinks along with a range of baked goods, light sandwiches and snacks. There are approximately 20,000 coffee shops in the U.S., producing over $10 billion in revenue. Design is integral to the success of a coffee shop.

Focus on a Message of Freshness
An aura of freshness should captivate the consumer. The customer must see the coffee being prepared and smell its aroma upon entering the store. Coffee shops feature a barista, or coffee-making specialist. The barista station, housing the equipment which produces espresso-based drinks, is an integral component of the counter design and may be positioned in such a manner as to have the barista facing the customer (promoting interaction) or with his side or back to the customer. The barista must be in close proximity to the cashier, as good communications between the two are necessary.

Bakery Displays Afford Outstanding Merchandising Opportunities
The best products for consumer eye-appeal are the fresh-baked pastries and snacks that you will offer. A glass display unit, with a refrigerated section for perishables, should be integrated as a crucial component of the front counter. The cases are rear-loaded so that the cashier can easily retrieve a baked goods order.

Ambiance Is As Important As Great Coffee
Today's coffee shops promote relaxation and lounging. Provide stylish couches and comfortable chairs for those that wish to enjoy their beverages while reading or working on their computers. Wi-Fi (wireless Internet access) installations are mandatory in coffee shop settings. The use of dark woods to convey a feeling of earthiness is also recommended. Be careful not to use light fabrics or colors that are easily stained by coffee anywhere in your store. Add background music and attractive shelving (for retail coffee product sales) as the finishing touches to an enjoyable coffee-drinking environment.

Back-of-the-House
Since this is a food establishment, there must be adequate consideration for activities that should not be in full view of the customer, such as dish washing and storage. The kitchen and store room should be located away from customer view. Remember to check local board of health requirements as to the kitchen and sanitation equipment that will be required for your coffee shop.
