Iced Coffee for Grownups

So it's a hot afternoon and you are at home with some friends over and you feel like something cold, something sweet, something with a little jolt and something with a little mellow.

Start with these ingredients:
  • Fresh brewed coffee
  • Chilled glass mugs
  • Crushed ice
  • Maple Syrup- 100% pure if you're Canadian
  • Cream
  • Dark spiced rum - at least 5 years but the older the rum the better the drink

Put your mugs in the freezer for at least as long as it takes to make a pot of coffee and let it cool.
Brew a fresh pot of coffee and pour it into a glass pitcher and let it sit in the refrigerator for an hour.

Fill the mug with 1 - shot of dark rum - I usually drink a 12 year old El Dorado Rum from Guyana. If you're going to pour a shot of cheap white rum in then I suggest you stop right here. The recipe requires a rum that can be sipped on it's own.

Fill the mug to the half way point with cold coffee.

Stir and taste. You may add ice and stop here.

Add a table spoon of maple syrup.

Stir and taste.  You may add ice and stop here.

Pour in a little cream.

Stir and taste. Add some ice.  Maybe top up the glass with the splash of rum that you just sipped away.

Drink with a straw. If you like this please suggest a name for me.
